Our Wines

When we started planning our new vineyards, it was clear to us that we would be applying biodynamic methods to grow our wines. This meant that we would also not go for the typical 10.000 plants per hectare, but rather plant the rows as well as the single wine plants with a larger distance, leading to only 5.000 plants per hectare. This gives the plant more space for roots, leaves and allows for more water and important minerals for each single plant. With this, we can grow a higher quality of grapes, which in return will deliver a rich and full wine with a great bouquet.

Wine tastings

We offer wine tastings for groups of up to 30 people at a time – feel free to contact us for reservation at: tosja@lacava-winery.com or by phone +49 170 8338795 – the combination of our Tuscan wines with Olive-Oil, Italian specialties like “Salame”, “Prosciutto”, “Parmesan”, fresh bred and other things is just amazing…come taste it!

We offer the following options for our wine tastings:

  • Pure wine tasting: includes 2 red wines, 1 white wine, olive oil tasting, bread, water: 17€ price per person.
  • Medium tasting: includes 2 red wines, 1 white wine, olive oil tasting, bread, water, salami, ham, olives, cheese, as well as a tour of the cafeteria and a presentation of our winery: 35 € price per person.
  • Full Tasting: includes 3 red wines, 1 white wine, Prosecco, olive oil tasting, bread, water, salami, ham, olives, cheese, as well as a canteen tour and a presentation of our winery. We offer this option for a minimum of 4 people: 45€ per person.

Soleterra – our reds

At La Cava, we grow four different varieties of red grapes: Sangiovese, Syrah, Cabernet Sauvignon, Cabernet Franc. For all plants, we have selected the best genotype for the specifics of our wine yards, reflecting the analysis which was previously made to understand local climate, mineral content and humidity of the land. It took us more than two years for planning and two years to work the ground: removing stones, implementing drainage to ensure stability of the land and prepare for the effects of climate change in the next years with more extreme weather.

The location of the wine yards offers a special climate: The strong slope ensures perfect exposure to the right amount of sunshine. Almost every day has some thermic winds either coming from the Apenins (usually in the morning) and in the afternoon from the direction of the sea (which is less then 5 km away). This creates an almost perfect amount of humidity in the wine yards throughout the year – not too dry, but also not too humid.

Each variety of grapes is harvested by hand and fermented at the specific time of maturity – the harvest is usually starting in late August up to late September, depending on the weather throughout the growth period in summer.

After fermentation, our wines are kept in Barrique barrels for 9-12 months before being bottled. The bottled wine is then kept for at least one more year in the wine cellar to further mature, before being prepared for sale.

Solevento – our white

We only grow a small amount of white wine – it is based on Vernaccia and Trebbiano grapes, the typical Tuscan varieties. The white is usually harvested before the red varieties – and immediately pressed from the berries. The juice is then fermented and kept in steel tanks for clearing. Once clear, it is bottled immediately and good for drinking – especially in Summer with a typical Tuscan lunch or dinner, or just as “Aperitivo”.

Our Wine Cellar

The quality of wine is mainly decided in the wine yard. Bad grapes, bad wine! Nevertheless, making a good wine also requires the right equipment and processes – especially when applying biodynamic methodologies. Our Cantina is equiped with the most modern and sophisticated equipment available in the market – helping us to get the best out of our grapes.

The fermentation is temperature controlled – we use inox taks throughout the process of wine making. After the fermentation, our wines are stored in barrique barrels for at least 9-12 months, before being bottled. Before we sell, the wine is maturing another 12-24 months in the bottles.

Our special editions are stored in a small cave in the mountain of La Cava – to go for another maturaton process.
